Ingredients 1 Onion 1 Lemon 1 Cooking Apple (Bramley) 200g Cooked Chestnuts 1 Tbsp Butter Salt Black pepper Method Saute the finely chopped onions in the butter (make sure they don’t caramlize) on a low heat. Zest the lemon rind and squeeze the lemon for juice. Peel and dice the apple into small cubes; corsely chop the cooked chestnuts. Add the lemon zest and apple to the softened onion and briefly cook, then add the chestnuts and bind stuffing with lemon juice.

Ingredients 1 Onion 1 Turkey Liver 100 gm Breadcrumbs 2 Tbsp Butter Salt Black pepper Sage (fresh or dry) Parsely (fresh) Stock Method Gently boil the turkey liver in a little water to cook, then chop and finely mash the liver to a fine consistency. Saute the finely chopped onions in the butter (make sure they don’t caramlize) on a low heat. Add the chopped (or dry) sage, chopped parsely, breadcrumbs, liver, and seasoning.

Ingredients 175 gm Butter or margarine 175 gm Plain flour 75 gm Granulated white sugar 75 gm Cornflakes 1 Tbsp Cocoa 1 tsp Baking powder 1 tsp Vanilla essence Method Pre-heat the oven to 200�C. Cream the butter and sugar. Add the flour, baking powder, cocoa and vanilla essence. Work in the slightly crushed cornflakes. Form into small mounds and place on a greased baking tray. Bake for 10 minutes.

Ingredients 240 gm Ground almonds 6 Egg(s) 200 gm Caster sugar 1 Orange zest 1 Lemon zest 1 tsp Almond essence Method Preheat the oven to 180�C. Separate the eggs. Beat the yolks and caster sugar to a smooth pale cream. Add the zests, almond essence and ground almonds and mix well. Beat the egg whites to form stiff peaks. Fold the egg whites into the almond mixture until totally incorporated.

Ingredients 110 gm Plain flour 55 gm Butter 110 gm Ground almonds 3 Tbsp Demerara sugar Method Rub the butter into the flour. Add the ground almonds and sugar. Spread over the cooked fruit. Bake in a pre-heated hot oven (say 180�C) until browned. Variation Use cooked apples, plums, fresh raspberries or other fruit.

Ingredients 50 gm Caster sugar 50 gm Whole almonds Method Put the caster sugar and almonds into a saucepan and place on a low heat until the sugar is completely dissolved. Cook until the liquid turns a rich dark colour. Be careful not to burn. Line a baking tray with baking parchment. Pour the praline mixture onto it and leave to cool. When cool break into pieces using a rolling pin.

Ingredients 225 gm Butter or margarine 50 gm Caster sugar 1 Egg(s) 350 gm Plain flour Filling 1 Tbsp Cornflour 2 Tbsp Brown sugar 1 tsp Mixed spice 110 gm Sultanas 1 Apple diced or sliced 1 tsp Lemon juice 150 ml Water Method Pre-heat the oven to 200�C. Cream butter and sugar. Add beaten egg, then the flour. Put half the pastry mixture onto a Swiss roll tin or equivalent and press the mixture to cover the base.

Ingredients 200 gm Plain flour 75 gm Sultanas 100 gm Butter or margarine 100 gm Caster sugar 2 tsp Baking powder 1 pinch Salt 200 gm Apple diced or sliced 2 Egg(s) 1 Lemon(s), juice and zest Method Preheat the oven to 175�C. Rub the butter or margarine into the flour, baking powder and salt. Add sugar, fruit, lemon juice and zest. Then add beaten eggs and mix well. Turn into a greased cake tin and bake for 1 hour.

Ingredients 110 gm Plain flour 225 gm Brown sugar 1 tsp Baking powder 50 gm Butter or margarine Cooked apple Method Heat the oven to 200�C. Rub the fat into the flour and baking powder. Add the sugar. This can all be done in a food processor. Put half the mixture into a round greased baking tin (preferrably with a loose base). Then spoon the cooked apple onto the base leaving a gap round the edge.

Ingredients 125 gm Butter 100 gm Caster sugar 140 gm Plain flour 150 gm Ground almonds 1 tsp Almond essence Filling 125 gm Butter 100 gm Caster sugar 150 gm Ground almonds 25 gm Plain flour 1� tsp Cinnamon 1 tsp Baking powder 2 Egg(s) 3 Apple diced or sliced 1 Lemon juice 50 gm Flaked almonds 2 Tbsp Demerara sugar Method Pre-heat the oven to 140�C. For the base, put all the ingredients into a food processor and pulse until it forms a dough.

Ingredients 100 gm Breadcrumbs 100 gm Butter or margarine 200 gm Brown sugar 1 tsp Cinnamon Cooked apple Method Preheat the oven to 180�C. Put the cooked apple into a baking dish. Melt the butter or margarine in a frying pan, add the breadcrumbs and cinnamon, then the sugar and fry until crisp. Be careful not to burn the mixture. Spread the breadcrumb mixture over the apple and bake until brown.

Ingredients 100 gm Dried apricots 50 gm Walnuts 100 gm Breadcrumbs 2 Onions 2 tsp Sage Salt Black pepper Method Chop the apricots and walnuts. Saute the finely chopped the onion and the sage in the butter and oil. Add the apricots, walnuts and seasoning and then the breadcrumbs and lightly fry to brown. Add a little water if the mixture is too dry. Variation Dried cherries can be used in place of the apricots.
