Ingredients 175 gm Butter or margarine 175 gm Plain flour 75 gm Granulated white sugar 75 gm Cornflakes 1 Tbsp Cocoa 1 tsp Baking powder 1 tsp Vanilla essence Method Pre-heat the oven to 200�C. Cream the butter and sugar. Add the flour, baking powder, cocoa and vanilla essence. Work in the slightly crushed cornflakes. Form into small mounds and place on a greased baking tray. Bake for 10 minutes.

Almond Cake (Spanish)

Ingredients 240 gm Ground almonds 6 Egg(s) 200 gm Caster sugar 1 Orange zest 1 Lemon zest 1 tsp Almond essence Method Preheat the oven to 180�C. Separate the eggs. Beat the yolks and caster sugar to a smooth pale cream. Add the zests, almond essence and ground almonds and mix well. Beat the egg whites to form stiff peaks. Fold the egg whites into the almond mixture until totally incorporated.

Ingredients 225 gm Butter or margarine 50 gm Caster sugar 1 Egg(s) 350 gm Plain flour Filling 1 Tbsp Cornflour 2 Tbsp Brown sugar 1 tsp Mixed spice 110 gm Sultanas 1 Apple diced or sliced 1 tsp Lemon juice 150 ml Water Method Pre-heat the oven to 200�C. Cream butter and sugar. Add beaten egg, then the flour. Put half the pastry mixture onto a Swiss roll tin or equivalent and press the mixture to cover the base.

Ingredients 200 gm Plain flour 75 gm Sultanas 100 gm Butter or margarine 100 gm Caster sugar 2 tsp Baking powder 1 pinch Salt 200 gm Apple diced or sliced 2 Egg(s) 1 Lemon(s), juice and zest Method Preheat the oven to 175�C. Rub the butter or margarine into the flour, baking powder and salt. Add sugar, fruit, lemon juice and zest. Then add beaten eggs and mix well. Turn into a greased cake tin and bake for 1 hour.

Ingredients 125 gm Butter 100 gm Caster sugar 140 gm Plain flour 150 gm Ground almonds 1 tsp Almond essence Filling 125 gm Butter 100 gm Caster sugar 150 gm Ground almonds 25 gm Plain flour 1� tsp Cinnamon 1 tsp Baking powder 2 Egg(s) 3 Apple diced or sliced 1 Lemon juice 50 gm Flaked almonds 2 Tbsp Demerara sugar Method Pre-heat the oven to 140�C. For the base, put all the ingredients into a food processor and pulse until it forms a dough.

Ingredients 1� tsp Instant coffee 2 Tbsp Water 75 gm Walnuts 175 gm Plain flour 3 tsp Baking powder 175 gm Butter or margarine 175 gm Caster sugar 3 Egg(s) Syrup 1 Tbsp Instant coffee 50 gm Demerara sugar 55 ml Water Topping 1 Tbsp Instant coffee 1 Tbsp Caster sugar Walnuts 250 gm Mascarpone Method Pre-heat the oven to 170�C. Toast the walnuts by placing them on a baking tray and putting them in the oven for about 7 minutes.

Ingredients 150 gm Butter 150 gm Caster sugar 2 Egg(s) 2 tsp Almond essence 50 ml Milk 150 gm Plain flour 2 tsp Baking powder 150 gm Ground almonds 150 gm Raspberries 25 gm Flaked almonds Method Pre-heat the oven to 180�C. Cream the butter and sugar. Whisk in the eggs and almond essence. Then beat in the milk. Fold in the flour, baking powder and ground almonds. Finally fold in the raspberries, trying not to break them up too much.

Ingredients 1 kg Mixed dried fruit 250 gm Brown sugar 400 ml Cold tea 450 gm Plain flour 5 tsp Baking powder 2 tsp Cinnamon 1 tsp Ground ginger 2 tsp Mixed spice � tsp Ground nutmeg 1 Egg(s) Method Soak the fruit and sugar in the tea and leave overnight. Preheat the oven to 170�C. Mix the remaining ingredients into the soaked fruit and beat well. Pour the mixture into greased and lined loaf tins.

Ingredients 95 gm Butter 3 Tbsp Golden syrup 75 gm Brown sugar 1 Tbsp Water 225 gm Plain flour � tsp Bicarbonate of soda 1 tsp Cinnamon � tsp Ground ginger Method Preheat the oven to 180�C. Melt the butter, golden syrup and water in a saucepan or in a bowl in the microwave. Add the rest of the ingredients and mix well. If the dough seems too wet, add a bit more flour.

Boiled Fruit Cake

Ingredients 100 gm Butter or margarine 100 gm Granulated white sugar 300 gm Sultanas 1 Egg(s) 200 gm Plain flour 2 tsp Baking powder 1 tsp Mixed spice Method Put the butter or margarine, sugar and sultanas in a saucepan and bring to the boil. Simmer for 20 minutes. Leave to cool. Heat the oven to 150�C. Add the egg and dry ingredients to the fruit and mix well. Pour into a greased cake or loaf tin and bake for 1 to 1 1/2 hours.

Boston Bread

Ingredients 450 gm Wholemeal flour 500 ml Milk 200 gm Mixed dried fruit 200 gm Granulated white sugar 4 Tbsp Golden syrup 1 tsp Bicarbonate of soda Salt Method Warm the milk and the golden syrup. Add the bicarbonate of soda and then all the other ingredients. Spoon the mixture into a pudding bowl and steam for 3 hours.

Ingredients 450 gm Strong white flour (bread) 2 tsp Salt � Tbsp Butter/oil 2 tsp Yeast 2 tsp Granulated white sugar 500 ml Water Method Sprinkle the yeast onto the sugar and water and stir well. Leave for 10 minutes until frothy. Put the flour and salt into a mixing bowl. Make a well in the flour and pour in the yeast and the oil or melted butter. For white bread only add an additional 1 Tablespoon of sugar.
