Add the salt and sugar on one side and the dried yeast on the other. Add the beaten eggs and warm milk and mix on a slow heat for 2 minutes, then on a medium speed for a further 8 minutes.

Caramel Squares

Ingredients 100 gm Butter 50 gm Granulated white sugar 200 gm Mixed dried fruit 1 Egg(s) 1 tsp Vanilla essence 400 gm Condensed milk 200 gm Marie biscuits Method Melt the butter and sugar in a saucepan. Add the tin of condensed milk and the dried fruit and bring to the boil, stirring constantly to avoid the mixture catching on the base of the pan and burning. Beat the egg well and stir into the fruit mixture taking care not to scramble the eggs.

Ingredients 150 gm Plain flour 1� tsp Baking powder � tsp Bicarbonate of soda � tsp Salt 50 gm Butter 80 gm Cheddar cheese � tsp Oregano � tsp Rosemary � tsp Chilli flakes 120 ml Buttermilk Method Preheat the oven to 190�C. Grate the cheese. Mix together the flour, herbs, seasoning and chilli flakes. Rub in the butter then stir in the cheese. If using a food processor, you can put the dry ingredients, ungrated cheese and butter and whizz together to form coarse crumbs.

Ingredients 50 gm Plain flour 50 gm Parmesan cheese 50 gm Cheshire cheese 50 gm Butter 2 pinch Salt Black pepper Cayenne pepper Method Pre-heat the oven to 190�C. Grate the Parmesan and Cheshire cheese. You can use a food processor for this. Sift the flour into a bowl and add the seasoning. Add the butter and parmesan to the flour and rub the mixture to a crumb consistency. Stir in the Cheshire cheese and work the mixture to form a dough.

Cheese Crispies

Ingredients Parmesan cheese Cheddar cheese Jarlsberg Method Pre-heat the oven to 200�C. Grate the cheese. Grease a baking tray well with olive oil. Make piles of grated cheese on the baking tray. Bake until golden brown - about 5-10 minutes. Be careful not to burn. Variation Any cheese can be used. I have made these with only parmesan and with a mixture of cheddar, parmesan and Jarlsberg, but inclusion of other hard cheeses or indeed Brie, Camembert or goats cheese would also work well.

Cheese Puffs

Ingredients 100 gm Cheddar cheese 100 gm Plain flour 2 tsp Baking powder 150 ml Milk Salt Cayenne pepper Method Pre-heat the oven to 250�C. Grate the cheese, using a food processor if preferred. Mix the dry ingredients and cheese. Add enough milk to make a sticky dough. Spoon small mounds of the mixture onto a greased baking sheet. Bake for 10 minutes. Serve while still warm. Notes For gluten-free version, use gluten-free flour.

Ingredients 140 gm Butter 140 gm Caster sugar 2 Egg yolk(s) 255 gm Plain flour 30 gm Cocoa Chocolate Method preheat the oven to 190�C. Cream the butter and sugar. Beat in the egg yolks. Add the flour and cocoa powder and mix to a stiff dough. If the mixture seems too stiff add a little water. Turn the dough out onto a floured board and roll out to approximately 1 cm thickness.

Chocolate Crunchies

Ingredients 100 gm Butter or margarine 2� Tbsp Granulated white sugar 100 gm Plain flour 1 tsp Baking powder 3 tsp Cocoa 75 gm Desiccated coconut Topping 200 gm Icing sugar 1 tsp Cocoa Water Method Pre-heat the oven to 150�C. To make the biscuit base, cream the butter and sugar, then add the dry ingredients. Spread the mixture into a greased baking tray. Bake for 30 minutes. Mix the topping ingredients to a thick pouring consistency using boiling water to cook the cocoa a little.

Line a rectangular baking tin about 18 x 28 cm or equivalent) with parchment or greaseproof paper, making sure the paper comes up all sides above the edge of the tin. Melt the butter and chocolate in a double saucepan (or bowl over boiling water).

Ingredients 60 gm Strong white flour (bread) 2 Egg(s) 50 gm Butter 150 ml Water Salt 1 tsp Vanilla essence 1 tsp Granulated white sugar Method Preheat the oven to 200�C. Boil the butter, sugar and water. Add the flour stirring until you have a smooth paste. Gradually beat in the egg, salt and vanilla essence until smooth and glossy. Lightly grease a baking tray. Quickly run the baking tray under a cold tap and then tap off any excess moisture.
