Mix the flour, sugar and salt in a mixing bowl. Add the melted butter to the yeast. Make a well in the flour and pour in the yeast mixture.

Ingredients 200 gm Plain flour 4 tsp Baking powder ½ tsp Salt 4 Tbsp Butter or margarine 100 ml Milk Method Pre-heat the oven to 200ºC. Rub the fat into the dry ingredients using a food processor if preferred. Add the milk to make a soft dough. Roll on a lightly floured board to a thickness of about 1/2 inch (10mm). Use a suitable sized pastry cutter to cut scones. Place on a greased baking tray and bake for 10 to 12 minutes until the scones are browned and cooked.

Spread into a well-greased baking tray and prick all over with a fork. Bake for 10 minutes at 175�C then for a further 25 minutes at 150�C. Cut into fingers before the shortbread sets too hard. Notes If preferred, roll the dough to a thickness of 3/4 inch (15mm) and cut out biscuits with a pastry cutter.

Ingredients 175 gm Wholemeal flour 175 gm Strong white flour (bread) 1 tsp Bicarbonate of soda 1 tsp Salt 300 ml Buttermilk Method Preheat the oven to 200�C. In a large bowl, mix together the flour, bicarb and salt. Add the buttermilk and mix to a sticky dough. Lightly flour a work sufrace and tip the dough onto it. Gently roll and fold the dough a couple of times to bring the mixture together.
