Cut the skinless chicken into strips or pieces and add to the marinade, stirring well to coat it. Leave to marinade for at least 3 hours.

Season the piece of beef fillet with salt and pepper. Roast for 15-20 minutes (for rare) or until the beef is cooked to your liking. Set aside to cool, saving any juices to add to the dressing. Mix the fish sauce, lime juice, sugar, chopped red chilli, chopped mint and chopped chives in a bowl.

Ingredients 280 gm Sweetcorn 2 Spring onions 3 Egg(s) 1 Tbsp Soy sauce 3 Tbsp Plain flour Method Chop the spring onions finely. Mix the sweetcorn and spring onions together. Beat the eggs and soy sauce and stir into the vegetables with the flour. Heat a frying pan with some groundnut oil or equivalent. Spoon about 2 tablespoons of the mixture per pancake into the pan and fry for about 1-2 minutes (or less) per side until golden brown.

Fry onion and garlic in olive oil until soft. Add mince and fry while breaking up all the lumps - if you don’t do this at this stage, the mince will be lumpy in the finished dish.

Ingredients 100 gm Plain flour 1 tsp Baking powder 50 gm Butter or margarine Salt Black pepper 1 tsp Mustard powder Method Rub the fat into the dry ingredients. Add sufficient water to make a fairly sticky dough. Roll into small balls and drop into the boiling liquid or gravy. Cook for 20 to 25 minutes. Ingredients 225 gm Smoked haddock 225 gm Salmon Dill 280 ml Milk 1 Lemon 1 Tbsp Plain flour 2 Tbsp Butter/oil Salt Black pepper Topping Potatoes Method Poach the fish in milk with the dill, some seasoning and the lemon sliced. When cooked remove the fish and flake into a heatproof dish. Reserve the milk for the sauce. Make a white sauce by melting the butter or oil and adding the flour to make a paste.
