Mushroom Risotto

Main Courses

Ingredients 220 gm Mushrooms 1 Onions 2 Garlic cloves 1 l Stock 110 gm Parmesan cheese 110 gm Butter 2 Tbsp Olive oil 150 gm Rice Salt Black pepper 1 Tbsp Thyme Method The stock used can be vegetable or chicken based. To make the stock more mushroomy, add finely chopped cooked mushrooms to the stock with the thyme and boil for 10 minutes or so. To make the risotto, slice the mushrooms and cook in 1 Tablespoon of oil and a little butter until soft.

Mushroom Stroganoff

Ingredients 225 gm Mushrooms 1 Onions 2 Garlic cloves 1 tsp Dijon mustard 1 Tbsp Brandy 1 Tbsp Creme fraiche Salt Black pepper Nutmeg (grated) 1 pinch Granulated white sugar 55 gm Butter Method Chop the onion and garlic finely. Slice the mushrooms. Fry onion and garlic in half the butter until soft. Add the mushrooms and fry until cooked. Add the brandy - you can burn off the alcohol but it may not be possible and is unnecessary.

Ingredients 2 Onions 2 Garlic cloves 4 Spring onions 2 Chilli 2 Tbsp Root ginger 2 Tbsp Celery 2 Tbsp Fish sauce 2 tsp Tamarind paste 2 Tbsp Caster sugar 2 Tbsp Peanuts 200 gm Beansprouts 200 gm Carrots 240 gm Courgettes 2 Egg(s) 2 Tbsp Ground nut oil 70 gm Egg noodles 1 Tbsp Soy sauce 1 Lime juice Method Finely chop the onions, garlic, fresh ginger, chilli and celery if used.

Pea Risotto

Ingredients 225 gm Peas 1 Onions 2 Garlic cloves 80 gm Butter 3 Tbsp Olive oil 110 gm Parmesan cheese Salt Black pepper 150 gm Rice Stock 225 gm Peas 230 ml White wine 1 Onions 2 Garlic cloves Mint 550 ml Water Garnish Mint Method To make the stock, finely chop the onion and garlic. Fry them in a little oil then add the frozen peas, fresh mint and water and/or white wine to make the amount of liquid you require.

Quiche Lorraine

Ingredients 100 gm Cheddar cheese 150 ml Single cream 3 Egg(s) � tsp Salt � tsp Black pepper Base Shortcrust pastry Method Make the pastry - see recipe for shortcrust pastry - or buy ready-made shortcrust pastry. Line a flan dish with the pastry. Pre-heat the oven to 200�C. Combine the eggs, single cream, salt and pepper and beat well. Add any cheese or other flavouring. Pour the mixture into the base.

Rice Chicken

Ingredients 2 Chicken breast 2 Onions 5 Bacon or pancetta Salt Black pepper Celery salt 170 gm Rice 2 tsp Marjoram 100 gm Mushrooms Water White wine 1 Tbsp plain flour Method Cut the chicken into pieces - about an inch square. Chop the onion and garlic. Cut the bacon (if used) into small pieces. Heat the frying pan with a little oil. Brown the chicken pieces then add the bacon and onion, garlic and herbs.

Roasted Red Peppers

Ingredients 3 Red peppers Tomatoes (red) Thyme 2 Tbsp Olive oil 3 Garlic cloves Method Preheat the oven to 180�C. Halve the red peppers leaving the stalk on. Remove the pith and seeds. Place on a roasting dish. Thinly slice the garlic and share between the peppers. Quarter cherry tomatos (or cut larger ones into small pieces) and distribute between the peppers. Season. Add any extra flavourings required - see Variations.

Spiced Chicken Pieces

Ingredients 4 Chicken breast 250 ml Buttermilk 50 gm Plain flour 1 Tbsp Paprika 1 Tbsp Smoked paprika 2 tsp Salt 1 tsp Oregano 1 tsp Marjoram 1 tsp Sage 1 tsp Chilli powder 1 tsp Black pepper 25 gm Cornflour Method Marinade the chicken pieces in the buttermilk overnight. Mix together all the other ingredients in a small roasting tray. Scrape most of the buttermilk off the pieces of chicken, then roll in the flour mixture and place on a roasting tray which has some oil in it.

Spinach and Ricotta Bake

Ingredients Tomato sauce 250 gm Ricotta Spinach Nutmeg (grated) Salt Black pepper Cheese sauce Cheddar cheese Method To make the tomato sauce, see Tomato Sauce recipe in the Sauces section. For the spinach mixture combine the cooked spinach and ricotta with seasoning. To make the cheese sauce, see Cheese Sauce recipe in the Sauces section. Pre-heat the oven to 180�C. Pour the tomato sauce into a baking dish. Cover with the spinach mixture.

Spinach, Potato and Goats Cheese Tart

Ingredients Shortcrust pastry 250 gm Spinach 300 gm Potatoes 4 Egg(s) 250 ml Double cream 1 Lemon zest 1 tsp Nutmeg (grated) Cayenne pepper 25 gm Parmesan cheese 150 gm Goats cheese Salt Black pepper Method Preheat the oven to 180�C. Line a 25cm tart tin with the shortcrust pastry. Bake blind for about 10 minutes. Remove the beans and bake for a further 5 minutes. Cook the spinach on a low heat until it wilts.

Squash Goulash

Ingredients 1 Onions 1 Red peppers 1 Garlic cloves 400 gm Squash 100 gm Carrots 2 tsp Paprika 1 tsp Caraway seed 85 gm Red lentils 450 ml Stock 4 Tbsp Tomato puree 1 tsp Granulated white sugar Salt Black pepper 1 Tbsp Olive oil Method Preheat the oven to 180�C. Peel the squash and chop into slices or chunks. Thickly slice the carrot. Chop the onion. Cut the red pepper into chunks.

Summer Vegetable Pasta Sauce

Ingredients 5 Spring onions 200 gm Asparagus 250 gm Peas 150 gm Broad beans Mint 1 Thyme 2 Garlic cloves 1 Lemon(s), juice and zest 250 gm Cottage cheese 30 gm Anchovy fillets 150 ml Single cream 150 ml Stock Method Trim and thinly slice the spring onions. Pour the oil from the tin of anchovies into a frying pan with half the anchovies. Add the spring onions and crushed garlic.
