Cut the red pepper, onion and pineapple into pieces. Marinade the prawns in soy sauce and a little lime juice.

Ingredients 70 gm Cornflour 30 gm Plain flour 80 ml Iced fizzy water Ice crushed Method Mix the cornflour and plain flour together. Add the iced fizzy water and a handful of crushed ice and mix roughly. if the batter seems too thick, add a bit more water. Lightly coat the tempura vegetables pieces, prawns or pieces of fish with flour then coat with the batter. Fry in hot oil until done.

Ingredients 75 gm Cheddar cheese 12 gm Blue cheese 1 Tbsp Plain flour 25 gm Butter Milk Cayenne pepper 1� tsp Grain mustard 2 tsp Worcestershire sauce Method Melt the butter in a pan, add the flour and then enough milk to make a thick white sauce Bring to the boil. Add the cheese (the blue cheese is optional) and seasonings. Serve on toast. Notes This can be made in advance and kept in the fridge or the freezer.

Ingredients 225 gm Cheddar cheese 4 Egg(s) 1 tsp Mustard powder Worcestershire sauce Salt Black pepper 2 Slices of bread Method Pre-heat the oven to 230�C. Put the grated cheese into a bowl with the egg yolks, mustard powder and Worcestershire sauce. beat well, then season to taste. Toast the bread and put into an oven proof dish. Whip the egg whites until stiff, then fold into the cheese mixture. Pour the mixture over the toast and bake for 10 minutes.

Make a well in the flour and whisk in the eggs one at a time, then add the milk still whisking. You want to get as much air into the mixture as you can.
