Ingredients 2 Garlic cloves 1 Onions 10 gm Root ginger 200 gm Cranberries 1 Orange juice 2 Tbsp Vinegar (any) 2 Tbsp Honey 2 Tbsp Soy sauce 1 tsp Chinese 5 spice Method Peel then chop the onion, garlic and ginger finely. Put a splash of oil in a saucepan. Add the onion, garlic and ginger and the 5-spice and gently fry making sure not to burn. Add the cranberries (fresh or frozen) and cook for 2 minutes.

Ingredients Horseradish Mayonnaise Method Mix the horseradish with the mayonnaise. The amount used will vary according to taste and the strength of the horseradish. Notes This dressing is particularly good with cooked beetroot (warm or cold). It is also a good alternative for potato salad.

Ingredients 50 gm Basil 6 Tbsp Olive oil 1 Tbsp Pine kernels 1 Garlic cloves Salt 25 gm Parmesan cheese Method Put the basil, garlic, pine kernels and olive oil into a blender and blend until you have a smooth paste. Stir in grated parmesan at this point if required. The pesto can be frozen for later use.

Ingredients 2 Onions 100 gm Breadcrumbs 2 Tbsp Butter/oil Salt Black pepper 2 tsp Sage Method Saute the finely chopped onions in the butter and/or oil. Add the sage, breadcrumbs and seasoning and lightly fry. Add water if the mixture is too dry. Notes If fresh sage is used, you will need more than 2 teaspoons. Other herbs can be added if required eg parsley.

Ingredients 2 Egg(s) � tsp Mustard powder � tsp Salt 1� Tbsp Granulated white sugar 50 ml Vinegar (any) 200 ml Single cream Method Hard boil the eggs. When cool, extract the yolks and mix with the dry ingredients. Then add the cream and vinegar. Cook over a pan of water until smooth and thick.

Ingredients 175 gm Soft brown sugar 110 gm Butter 6 Tbsp Double cream Method Combine all the ingredients in a saucepan and heat gently until the sugar has dissolved. Continue cooking until the sauce has thickened and slightly caramelised, stirring all the time to avoid burning. Serve with Steam Pudding (see recipe in Pudding section) or over slices of Gingerbread (see Cakes section).

Ingredients 1 Tbsp Cornflour 1 Tbsp Soy sauce 2 Garlic cloves 2 Tbsp Granulated white sugar 2 tsp Tomato puree 4 Tbsp Vinegar (any) Salt Black pepper Method If you are using meat, cut it into cubes and marinade in the cornflour and soy sauce for a few minutes. For a vegetarian version, either marinade some of the vegetables in the same way (eg courgettes, aubergine, carrots, etc) or add the cornflour and soy sauce to the vegetables when frying.

Ingredients 3 Tbsp Mayonnaise 2 tsp Tamarind paste Salt Black pepper 3 Tbsp Coriander leaves Method Chop the coriander leaves finely. Mix together the mayonnaise, tamarind paste, seasoning and coriander. Adjust seasoning to taste. Serve with fish or crab cakes or with potato wedges. Variation Replace the coriander with any herb of choice or omit the herb altogether.

Ingredients 1 Onions 1 Garlic cloves 8 Tomatoes (red) Salt Black pepper Oregano 1 Tbsp Olive oil Method Peel and finely chop the onions and garlic. If using fresh tomatoes, remove the skins by piercing the skin of each tomato in one or two places and placing them in boiling hot water. Leave for a few minutes, then remove. The skins will slip off easily. Chop the tomatoes. Saute the onions and garlic in the oil until soft, then add the oregano and chopped tomatoes and seasoning.

Ingredients 1 tsp Mustard powder 2 tsp Salt � tsp Black pepper 2 tsp Granulated white sugar 8 Tbsp Sunflower oil 4 Tbsp Vinegar (any) Method Mix the dry ingredients together until thoroughly blended. Add a small amount of the oil and mix to a thick paste. Add a small amount of the vinegar and mix thoroughly, Keep adding small amounts of oil and vinegar until all the dry ingredients have been emulsified.

Ingredients 1 Tbsp Plain flour 25 gm Butter/oil Milk Salt Black pepper Cayenne pepper Nutmeg (grated) Method Melt the butter (or oil) in a saucepan. Add the flour and mix well. Slowly add the milk stirring vigourously to avoid lumps. This can be done off the heat or still over the heat but the latter needs more care to avoid the lumps. Bring to a boil, stirring all the time to make a smooth sauce.
