Chilli Bites

Starters and Snacks

Ingredients 225 gm Gram flour 1 Onions 2 Potatoes 25 gm Plain flour 1 tsp Baking powder Salt 1 Chilli Water Method Finely chop the onion. Grate the raw potatoes. Finely chop (and de-seed if preferred) the chilli. Make a batter with the flour and gram flour, baking powder and water. Stir in the other ingredients. Deep fry small spoonfuls of the mixture. Serve immediately.

Courgette Pate

Ingredients 100 gm Butter 300 gm Courgettes 4 Spring onions 1 Tbsp Parsley 2 Egg(s) Salt Black pepper Method Dice the courgettes. Chop the spring onions and parsley finely. Saute the courgettes in half the butter. Add the spring onions and parsley. Put the vegetables into a food processor and puree. Beat the eggs. Put the rest of the butter into the pan and lightly scramble the eggs. Add to the courgette mixture and puree again.

Croustade with Smoked Salmon

Ingredients 3 Slices of bread 50 gm Butter Smoked salmon Cream cheese Dill Method Preheat the oven to 180�C. Roll each slice of bread with a rolling pin to make them as thin as you can. Using a pastry cutter, cut out rounds of the size required. Melt the butter. Brush each of the rounds of bread on both sides and press into the tartlet tins. Bake for 15-20 minutes or until crisp and golden brown.

Filo Parcels

Ingredients 1 packet Filo pastry Required filling Butter/oil Method Preheat the oven to 180�C. Take a sheet of filo pastry, brush with a mixture of melted oil and butter or margarine. Cut in half across the long side to make 2 pieces. Place a small amount of filling in the centre of one end of each piece, fold in the sides over the filling and then roll. Seal the end with a little more of the oil/butter mixture.

Gazpacho Soup

Ingredients 3 Slices of bread 2 Garlic cloves � Cucumber 1 Green peppers 1 Red peppers 1 Onions 600 gm Tomatoes (red) 80 ml Olive oil 2 Tbsp Vinegar (any) � tsp Salt � tsp Black pepper � tsp Marjoram 1 tsp Basil 300 ml Tomato juice Method Cut the bread (preferrably brown bread) into cubes and pour the tomato juice over them. Leave to soak for about 5 minutes. Chop the garlic, cucumber, peppers, onion and tomatoes.

Goats chees and Red Onion Marmalade Tartlets

Ingredients Filo pastry Goats cheese Red onion marmalade Method Preheat the oven to 180�C. Melt the butter in a small saucepan. Take a sheet of file pastry onto a board and brush with melted butter. Place another sheet over the top and brush with butter again. Dependent on the size of you tartlets tins, cut squares on the filo slightly bigger than the tartlet. Press the square into the tin.

Gravadlax

Ingredients 500 gm Salmon 2 Tbsp Dill 20 gm Coarse sea salt 30 gm Caster sugar 5 gm Black pepper Method Remove the skin from the fish and slice horizontally into 2 fillets. Chop the dill and mix thoroughly in a bowl with the salt, pepper and sugar. Lay out a sheet of foil then of cling film big enough to enclose the fish completely. Spread a third of the mixture over the cling film then place one fillet of fish on top of it.

Hummus

Ingredients 240 gm Chickpeas 1 Lemon(s), juice and zest 2 Garlic cloves 1 tsp Ground cumin 1 tsp Paprika � tsp Salt 2 Tbsp Olive oil 4 Tbsp Water 1 Tbsp Tahini Method Drain the tin of chickpeas. Combine the chickpeas, lemon juice and zest, crushed garlic, cumin, paprika, salt and tahini and blend to a smooth paste. Add more lemon juice, salt or cumin to taste. Notes If you like the humus coarser, blend the mix less.

Mushroom Tarts

Ingredients 350 gm Mushrooms 1 Onions 40 gm Butter/oil Salt Black pepper Nutmeg (grated) Thyme 2 Tbsp Single cream Shortcrust pastry Method Preheat the oven to 180�C. Finely chop the onion and the mushrooms. Cook the onion in the butter and oil until softened. Add the mushrooms and chopped thyme and cook for a further 20 minutes or until the mushrooms are soft and the mixture fairly dry. Add the seaoning and cream and cook until most of the liquid has evaporated.

Onion Bhajiis

Ingredients 2 Red onions 1 Chilli 2 Garlic cloves 8 gm Root ginger 1 Tbsp Butter � tsp Chilli powder � tsp Turmeric 9 Tbsp Gram flour 2 Tbsp Coriander leaves � tsp Fennel seeds Salt Method Thinly slice the red onions. Finely chop the green chilli and ginger. Mix the onions, chilli, ginger and melted butter. Add the chilli powder, gram flour, chopped coriander, fennel seeds and salt. Sprinkle with water and mix well so that it is thick enough to hold its shape.

Potato skins

Ingredients Potato Method Bake the number of potatoes you require, using smallish potatoes. Remove from the oven and allow to cool. Cut each potato in half and remove most of the flesh. Place the potato halves back onto the baking tray and bake for a further 10-15 minues until crisp but not burnt. Serve with filling made from blue cheese mixed with cream cheese, or a mixture of cream cheese and sour cream with mint or chives.

Prawn and Haddock Terrine

Ingredients 225 gm Cooked prawns 700 gm Smoked haddock 100 gm Butter or margarine 100 gm Breadcrumbs 2 Lemon(s), juice and zest 2 Egg(s) Parsley Salt Black pepper Method Pre-heat the oven to 150�C. If the prawns are large, chop them into smaller pieces. Squeeze the juice of half a lemon over them and season with salt and pepper. Put the remaining lemon juice and the zest into a food processor.
