Apricot Jam

Preserves

Ingredients 900 gm Apricots 900 gm Granulated white sugar 1 Lemon juice Method Cut the apricots in half and remove the stones. Place the apricot halves in a preserving pan, covering or layering with the sugar. Add the lemon juice and leave to stand overnight. Place the preserving pan over a medium heat and allow the sugar to dissolve. Make sure it is completely dissolved before continuing. Turn the heat up to full and boil rapidly for 10 to 20 minutes, stirring from time to time to avoid burning.

Aubergine Bake

Ingredients 1 Aubergines 2 Onions 3 Tomatoes (red) Method Peel and slice the aubergine into rings. Slice the onions and tomatoes. Fry the aubergine in olive oil and a little butter if required. Place the aubergine in a lightly oiled baking dish. Season with salt and pepper. Fry the onions until lightly caramelised and place over the aubergine. Fry the tomatoes and layer over the onions. Season again. Sprinkle breadcrumbs over the dish with a little grated cheese if required.

Aubergine Curry

Ingredients 500 gm Aubergines 2 tsp Turmeric 2 tsp Chilli powder 2 tsp Ground cumin Salt 2 Tbsp Ground nut oil 400 gm Yogurt 2 tsp Granulated white sugar 2 Tbsp Coriander leaves Method Slice the aubergine into thin slices. Dust with the turmeric, salt and half the chilli powder. Fry the aubergine in the oil until soft. Alternatively, preheat the oven to 180�C. Put some of the oil into a baking tray and lay the aubergine slices on it.

Ingredients 1� tsp Instant coffee 2 Tbsp Water 75 gm Walnuts 175 gm Plain flour 3 tsp Baking powder 175 gm Butter or margarine 175 gm Caster sugar 3 Egg(s) Syrup 1 Tbsp Instant coffee 50 gm Demerara sugar 55 ml Water Topping 1 Tbsp Instant coffee 1 Tbsp Caster sugar Walnuts 250 gm Mascarpone Method Pre-heat the oven to 170�C. Toast the walnuts by placing them on a baking tray and putting them in the oven for about 7 minutes.

Ingredients 500 ml Milk 2 tsp Vanilla essence 2 Egg(s) 2 Tbsp Caster sugar Nutmeg (grated) Method Preheat the oven to 150�C. Heat the milk until a skin forms on the surface (ie scald the milk). Beat the eggs and sugar until frothy, then add the vanilla essence and milk, beating well to prevent the eggs from scrambling. Pour the mixture into a greased baking dish. Grate a little nutmeg over the pudding.

Ingredients Pears Plums Peaches Grapes Apple diced or sliced Oranges Cinnamon Water Red wine Nectarines Method Pre-heat the oven to 180�C. Cut the plums, peaches, nectarines, etc in halves or quarters and remove the stones. Peel, core and slice the apples and pears. Grapes and other soft fruit can be added whole. Peel the oranges and remove all pith, then cut into chunks. Place all the fruit in a large baking dish, sprinkle with cinnamon and add a little water or wine.

Ingredients 150 gm Butter 150 gm Caster sugar 2 Egg(s) 2 tsp Almond essence 50 ml Milk 150 gm Plain flour 2 tsp Baking powder 150 gm Ground almonds 150 gm Raspberries 25 gm Flaked almonds Method Pre-heat the oven to 180�C. Cream the butter and sugar. Whisk in the eggs and almond essence. Then beat in the milk. Fold in the flour, baking powder and ground almonds. Finally fold in the raspberries, trying not to break them up too much.

Ingredients 100 gm Ground almonds 100 gm Butter or margarine 100 gm Caster sugar 2 Egg(s) 1 tsp Almond essence Shortcrust pastry Method Preheat the oven to 200�C. First line a flan dish with shortcrust pastry - see recipe for Shortcrust Pastry or buy ready made. Spread a thin layer of raspberry (or other) jam over the base of the pastry. Cream the butter or margarine and sugar and then gradually beat in the eggs until fluffy.

Ingredients 1 kg Mixed dried fruit 250 gm Brown sugar 400 ml Cold tea 450 gm Plain flour 5 tsp Baking powder 2 tsp Cinnamon 1 tsp Ground ginger 2 tsp Mixed spice � tsp Ground nutmeg 1 Egg(s) Method Soak the fruit and sugar in the tea and leave overnight. Preheat the oven to 170�C. Mix the remaining ingredients into the soaked fruit and beat well. Pour the mixture into greased and lined loaf tins.

Beef Stroganoff

Ingredients 225 gm Fillet Steak 1 Onions 2 Garlic cloves 1 tsp Dijon mustard 1 Tbsp Brandy 1 Tbsp Creme fraiche Salt Black pepper Nutmeg (grated) 1 pinch Granulated white sugar 55 gm Butter Method Chop the onion and garlic finely. Cut the fillet steak into small strips. Fry onion and garlic in half the butter until soft. Add the fillet steak and fry briefly. Add the brandy - you can burn off the alcohol but it may not be possible and is unnecessary.

Ingredients 95 gm Butter 3 Tbsp Golden syrup 75 gm Brown sugar 1 Tbsp Water 225 gm Plain flour � tsp Bicarbonate of soda 1 tsp Cinnamon � tsp Ground ginger Method Preheat the oven to 180�C. Melt the butter, golden syrup and water in a saucepan or in a bowl in the microwave. Add the rest of the ingredients and mix well. If the dough seems too wet, add a bit more flour.
