250 gm Strong white flour (bread)
1 tsp Salt
25 gm Caster sugar
1 tsp Yeast
70 ml Milk
2 Egg(s)
125 gm Butter
Put the flour into the bowl of a mixer fitted with a dough hook. Add the salt and sugar on one side and the dried yeast on the other. Add the beaten eggs and warm milk and mix on a slow heat for 2 minutes, then on a medium speed for a further 8 minutes. Add the softened butter and continue to mix for another 5 minutes. Tip the dough into a bowl and leave to chill overnight. Tip the dough out onto a board and knock out the air by folding it a few times. Shape into a large round loaf or a number of small ones. Cover with a clean plastic bag and leave to prove for 2 hours.
Alternatively put all the ingredients into a bread machine and mix using the Dough program. Tip out onto a board and shape as required. Leave to prove until well risen.
Heat the oven to 190�C. Bake for 20-30 minutes until it seems cooked. Allow to cool.
