Carrot and Coriander Fritters

Ingredients

6 Carrots
4 Spring onions
2 Tbsp Coriander leaves
2 Egg(s)
1 Tbsp Plain flour
2 Tbsp Parmesan cheese
Salt
Black pepper
2 Tbsp Olive oil

Method

Grate the carrots, thinly slice the spring onions, chop the coriander and put in a large bowl. Add the beaten eggs, flour, salt, pepper and parmesan and mix well. Just before cooking, form into patties, squeezing out any excess liquid if necessary. Heat a large frying pan, add the oil and fry for about 5 minutes until golden brown on both sides. Serve immediately.

Notes

If mixture does not hold together, add a little more flour.
