375 gm Carrots
200 gm Chickpeas
� Onions
1 Tbsp Tahini paste
� tsp Ground cumin
1 Egg yolk(s)
1� Tbsp Olive oil
50 gm Breadcrumbs
1 Lemon zest
1� Tbsp Sesame seeds
Grate the carrot. Chop the onion.
Put half the grated carrot, the chickpeas, chopped onion. tahini paste, cumin and egg yolk into a food processor and whizz to a thick paste. Put the mixture in a large bowl. Put 1 tablespoon of oil into a pan and fry the remaining carrot for 8-10 minutes. Add the fried carrot, the breadcrumbs, lemon zest and sesame seeds to the other mixture. Add the seasoning.
Form into burgers or patties, using wet hands to avoid sticking. Cover and chill until ready to use.
Heat a frying pan and brush the burgers with oil. Cook for about 5 minutes on eaach side, until golden and crisp. Serve.
