150 gm Plain flour
1� tsp Baking powder
� tsp Bicarbonate of soda
� tsp Salt
50 gm Butter
80 gm Cheddar cheese
� tsp Oregano
� tsp Rosemary
� tsp Chilli flakes
120 ml Buttermilk
Preheat the oven to 190�C.
Grate the cheese.
Mix together the flour, herbs, seasoning and chilli flakes. Rub in the butter then stir in the cheese. If using a food processor, you can put the dry ingredients, ungrated cheese and butter and whizz together to form coarse crumbs. Finally add the buttermilk and mix well.
Turn onto a floured board and roll to about 1 inch (2.5cm) in thickness. Use a round cutter to make small scones. Place on a greased or lined baking sheet. Brush with a little buttermilk. Bake for 15 minutes until golden brown.
If the mixture seems too wet, add a little more flour.
Use any cheese that you like. I mix cheddar and parmesan.
