Cheese Crispies

Cakes, Biscuits and Bread  

Ingredients

Parmesan cheese
Cheddar cheese
Jarlsberg

Method

Pre-heat the oven to 200�C.

Grate the cheese. Grease a baking tray well with olive oil. Make piles of grated cheese on the baking tray. Bake until golden brown - about 5-10 minutes. Be careful not to burn.

Variation

Any cheese can be used. I have made these with only parmesan and with a mixture of cheddar, parmesan and Jarlsberg, but inclusion of other hard cheeses or indeed Brie, Camembert or goats cheese would also work well.

Use of a stringy cheese such as Jarlsberg, Emmental or Gruyere makes the cheese crispies hold together well.
