Cheesecake (Baked)

Ingredients

175 gm Ginger biscuits
50 gm Butter
225 gm Cottage cheese
3 Egg(s)
110 gm Caster sugar
175 ml Yogurt
50 gm Sultanas

Method

Preheat the oven to 160�C.

Mix the crumbed ginger biscuits with the melted butter and use to form a base.

Separate the eggs. Put the cottage cheese, egg yolks, half the sugar and the yogurt in a bowl and beat until smooth. Add the sultanas. Whisk the egg whites until stiff then add the remaining sugar. Fold the egg whites into the cheese mixture. Pour onto the biscuit base. Bake for 45 minutes.

Variation

Use cream cheese in place of part or all the cottage cheese.

Add lemon zest or vanilla essence as flavouring.
