500 gm Fillet Steak
2 Tbsp Fish sauce
2 Tbsp Lime juice
1 tsp Caster sugar
1 Tbsp Chives
2 Tbsp Mint
1 Chilli
Preheat the oven to 220�C. Season the piece of beef fillet with salt and pepper. Roast for 15-20 minutes (for rare) or until the beef is cooked to your liking. Set aside to cool, saving any juices to add to the dressing.
Mix the fish sauce, lime juice, sugar, chopped red chilli, chopped mint and chopped chives in a bowl.
Cut the beef into very thin slices. Pour the dressing over the beef about 5 minutes before serving.
The amount of fillet steak used can be varied as required. However to keep it rare it needs to be in a single piece and the cooking time adjusted accordingly.
Use flash fried fresh tuna in place of the steak.
