Sauces, Stuffings and Marinades
1 Chilli
2 Garlic cloves
1 Tbsp Root ginger
8 Black pepper
1 tsp Cumin seeds
1 tsp Coriander seeds
1 tsp Turmeric
Coriander leaves
Mint
100 gm Creamed coconut
Put all the ingredients into a food processor and whizz to mix. Add a little water if the mxture is too thick.
Pour over the chicken pieces and leave to marinade for a couple of hours or overnight. Roast or grill the chicken until cooked.
The marinade could be made by grinding the spices with a pestle and mortar and then stirring in the other ingredients.
The marinade could be used with tiger prawns or other meat.
