Chocolate Biscuits

Cakes, Biscuits and Bread  

Ingredients

140 gm Butter
140 gm Caster sugar
2 Egg yolk(s)
255 gm Plain flour
30 gm Cocoa
Chocolate

Method

preheat the oven to 190�C.

Cream the butter and sugar. Beat in the egg yolks. Add the flour and cocoa powder and mix to a stiff dough. If the mixture seems too stiff add a little water.

Turn the dough out onto a floured board and roll out to approximately 1 cm thickness. Using 2 different sized cutters, one a bit larger than the other, cut out an equal number of rounds. Place the smaller circles of dough on a greased or lined baking tray. Then put a square of chocolate on each circle. Cover each biscuit with the larger circle and press down the edges firmly to avoid leakage. Bake for 10 minutes. Place the biscuits on a cooling rack to cool.
