Corn Pancakes

Ingredients

280 gm Sweetcorn
2 Spring onions
3 Egg(s)
1 Tbsp Soy sauce
3 Tbsp Plain flour

Method

Chop the spring onions finely. Mix the sweetcorn and spring onions together. Beat the eggs and soy sauce and stir into the vegetables with the flour.

Heat a frying pan with some groundnut oil or equivalent. Spoon about 2 tablespoons of the mixture per pancake into the pan and fry for about 1-2 minutes (or less) per side until golden brown.

Serve with sweet chilli sauce.
