Ginger Pastry (sweet)

Ingredients

200 gm Plain flour
40 gm Icing sugar
2 tsp Ground ginger
Salt
125 gm Butter
1 Egg(s)
25 ml Water

Method

Mix the dry ingredients together in a bowl or food processor. Rub in the butter until the mixture resembles breadcrumbs. Mix the egg and water together, add to the mixture and form into a dough, adding a little olive oil if it is too dry. Wrap the pastry in cling film and put in the fridge for about half an hour before using.
