Hoisin Sauce

Sauces, Stuffings and Marinades  

Ingredients

2 Garlic cloves
1 Onions
10 gm Root ginger
200 gm Cranberries
1 Orange juice
2 Tbsp Vinegar (any)
2 Tbsp Honey
2 Tbsp Soy sauce
1 tsp Chinese 5 spice

Method

Peel then chop the onion, garlic and ginger finely. Put a splash of oil in a saucepan. Add the onion, garlic and ginger and the 5-spice and gently fry making sure not to burn. Add the cranberries (fresh or frozen) and cook for 2 minutes. Add the soy sauce, vinegar, honey and orange juice and simmer until thick and glossy. Pour into a blender and blitz until smooth, then season to taste.

Notes

This keeps well in the fridge for some time.

Variation

Use plums instead of cranberries. This will need to cook longer to ensure the plums are soft.

Use 2 clementines instead of the orange.
