225 gm Unsalted butter
225 gm Demerara sugar
450 gm Oats
50 gm Desiccated coconut
225 gm Honey
Preheat the oven to 180�C.
Put the butter, sugar and honey in a saucepan and heat until the butter has melted and the sugar dissolved. Stir occasionally to prevent burning. Add the oats and coconut and mix well. Transfer the mixture to a greased baking tray and smooth the surface. Bake for 15-20 minutes until golden brown. Leave to cool then cut into squares.
Reduce the amount of honey if you find it too sweet.
Use nuts in place of the coconut eg chopped walnuts.
