400 gm Condensed milk
275 ml Double cream
400 ml Creme fraiche
2 tsp Vanilla essence
Beat the cream, creme fraiche, condensed milk and vanilla together well. Pour into a freezing tray and put into the freezer.
If you prefer sweeter ice cream, reduce the amount of cream and creme fraiche.
YOu can use only cream or only creme fraiche if you prefer. You can also replace some of the cream with yoghurt, mascarpone and/or evaporated milk.
Remove the ice cream from the freezer at least half an hour before serving to allow it to soften.
To make different flavours of ice cream, replace the vanilla essence with one of the following.
Lemon Add lemon juice and zest to taste.
Ginger Add stem ginger with 1 or 2 teaspoons of ground ginger.
Fruit Add pureed fruit such as strawberries raspberries mango sieved passion fruit (4-6 fruit) redcurrant cooked and sieved gooseberry cooked and pureed with a little elderflower cordial added.
Coconut Add coconut milk and optionally dessicated coconut.
Coffee Add some strong coffee - I use instant but espresso would do. This is good with chopped walnuts added.
Fudge or Salted caramel Replace the condensed milk with caramelised condensed milk. Add some sea salt if you want salted caramel flavour.
Kulfi Replace the creme fraiche with a can of evaporated milk and/or milk powder and add cardamon to make kulfi (Indian ice cream)
