225 gm Sweetcorn

50 gm Plain flour
4 tsp Baking powder
1 Tbsp Butter
1 Tbsp Granulated white sugar
1 tsp Salt
Remove the kernels from the cob of the sweetcorn using a sharp knife. Mince the sweetcorn using a food processor. Melt the butter. Beat the egg. Mix all the ingredients together well. Pour into a greased pudding basin and steam for about 1 hour.
If fresh sweetcorn is not available, canned or frozen sweetcorn kernels can be used instead.
It takes about 3 medium sized sweetcorn to produce the required quantity of fresh sweetcorn.
