450 gm Beef chuck steak
1 Onions
2 Garlic cloves
1 Tbsp Plain flour
Water
2 tsp Worcestershire sauce
Salt
Black pepper
Marjoram
Mustard powder
Nutmeg (grated)
1 pinch Granulated white sugar
Gravy browning
Cut the meat into cubes. Chop the onion and garlic finely.
Put a little oil into a frying pan or saucepan and heat. When hot, add the meat and allow to brown. Add the onions, garlic and marjoram and fry for a few minutes. Add the flour and mustard and stir well, then add the water and continue stirring to make a smooth gravy. The amount of liquid will vary according to the thickness of gravy required. Add the Worcestershire sauce, gravy browning, sugar (optional) and spices and season to taste. Simmer until the meat is cooked.
Use lamb or chicken in place of beef.
Replace the water with a mixture of water and wine, all wine or all beer. If the wine or beer used is quite sweet, you will not need any sugar.
Use any herbs of your choice in place of marjoram.
Add finely chopped celery for more flavour - or celery salt.
Beef Stew with Dumplings
Make the stew as described. About 20 minutes before serving, add the Dumplings (see recipe) to the boiling stew.
Steak and Kidney Pie / Steak and Mushroom Pie
Make the beef stew as described but add finely chopped kidney and/or mushrooms at the frying stage. Make the pastry (Shortcrust or Flaky - see recipes) and keep in the fridge until required. Pre-heat the oven to 200�C. Put the cooked meat into a pie dish. Roll the pastry to the required size and place over the meat, pressing the edges onto the pie dish. Make a small slit in the centre of the pastry to allow steam to escape. Bake for about 15 minues until the pastry is brown and cooked.
Meat and Vegetable Casserole
Make the stew as described using beef, lamb or chicken. Add small whole onions, pieces of carrot, small potatoes or other vegetable of choice once the gravy is made. Cook in a saucepan or in the oven until the vegetables and meat are cooked.
Lamb Hotpot
Use whole lamb chops to make the stew. Par-boil sliced potatoes.
Line a heat-proof dish with some of the par-boiled sliced potatoes, place the cooked lamb chops on top with half the gravy. Then place the rest of the potatoes over the top and pour the remaining gravy over them. Bake in a hot oven until browned.
