Pavlova

Ingredients

4 Egg white(s)
250 gm Caster sugar
Salt
2 tsp Cornflour
1 tsp White wine vinegar

Method

Preheat the oven to 180�C.

Line a flat baking sheet with baking parchment and draw a circle on it about 23cm in diameter.

Whisk the eg whites and salt until they are holding firm peaks but not too stiff. Gently add the caster sugar a spoonful at a time still whisking until you have a bowl of satiny snowy meringue. Sprinkle the cornflour and vinegar over the top and fold in with a metal spoon.

Dollop the meringue mixture onto the drawn circle. Smooth and shape making sure the top is flat. Put it into the oven turning the temperature down to 150�C immediately and cook for 1 hour. Switch off the oven and leave inside to cool. When it is completely cool, turn carefully it top side onto a plate and peel off the paper.

To serve, cover generously with whipped cream and decorate with the fruit of your choice.

strawberries, raspberries, etc. passion fruit and mango
