Pistachio Sables

Cakes, Biscuits and Bread  

Ingredients

15 gm Pistachio nuts
40 gm Strong white flour (bread)
40 gm Unsalted butter
40 gm Parmesan cheese
Cayenne pepper
Salt
Black pepper

Method

Finely chop the unsalted pistachio nuts. Mix them in with all the other ingredients and rub in the fat to form a dough. Transfer the dough to a board and form into a sausage shape. Wrap it in cling film and put in the freezer for about 30 minutes or until required.

Preheat the oven to 180�C. Remove the dough from the freezer and slice into discs about 0.5cm wide. Spread these onto a baking sheet and bake for 10-15 minutes until golden around the edges. Allow to cool on a wire rack. Store in an airtight tin.

Notes

I usually use salted butter and less salt to season the mix.

If the dough has been in the freezer longer than 30 minutes, you may need to let it thaw a little before slicing it into discs.
