Scones

Cakes, Biscuits and Bread  

Ingredients

200 gm Plain flour
4 tsp Baking powder
½ tsp Salt
4 Tbsp Butter or margarine
100 ml Milk

Method

Pre-heat the oven to 200ºC.

Rub the fat into the dry ingredients using a food processor if preferred. Add the milk to make a soft dough.

Roll on a lightly floured board to a thickness of about 1/2 inch (10mm). Use a suitable sized pastry cutter to cut scones. Place on a greased baking tray and bake for 10 to 12 minutes until the scones are browned and cooked.

Variation

Fruit scones: Add a handful of dried fruit to the mixture with the milk.

Rich scones: Replace the milk with an egg and 120ml (5 fl oz) of milk.

Cheese: Add grated cheese (eg cheddar) to the mixture with some cayenne pepper.
