Spiced Chicken Pieces

Ingredients

4 Chicken breast
250 ml Buttermilk
50 gm Plain flour
1 Tbsp Paprika
1 Tbsp Smoked paprika
2 tsp Salt
1 tsp Oregano
1 tsp Marjoram
1 tsp Sage
1 tsp Chilli powder
1 tsp Black pepper
25 gm Cornflour

Method

Marinade the chicken pieces in the buttermilk overnight.

Mix together all the other ingredients in a small roasting tray.

Scrape most of the buttermilk off the pieces of chicken, then roll in the flour mixture and place on a roasting tray which has some oil in it.

Bake in a hot oven until cooked and crispy. You may need to turn them half way.

Notes

If you can be bothered, fry the chicken pieces to slightly to brown them before placing on a roasting tray and roast until crisp and brown.

Variation

Use chicken thighs or drumsticks instead of chicken breast.
