Tomato sauce
250 gm Ricotta
Spinach
Nutmeg (grated)
Salt
Black pepper
Cheese sauce
Cheddar cheese
To make the tomato sauce, see Tomato Sauce recipe in the Sauces section.
For the spinach mixture combine the cooked spinach and ricotta with seasoning.
To make the cheese sauce, see Cheese Sauce recipe in the Sauces section.
Pre-heat the oven to 180�C.
Pour the tomato sauce into a baking dish. Cover with the spinach mixture. Then pour over the cheese sauce. Sprinkle grated cheese over the top and bake until bubbling and browned.
This recipe can be used to make vegetable lasagne by adding layers of uncooked lasagne. It may need longer in the oven to ensure the pasta is cooked.
For the spinach mixture you can use either pre-cooked fresh spinach or frozen spinach.
Any grated cheese can be used in place of cheddar.
