4 oz Butter or margarine
6 oz Caster sugar
6 oz Plain flour
2 tsp Baking powder
2 Egg(s)
1 Tbsp Vanilla essence
4 Tbsp Milk
Pre-heat the oven 175�C.
Put all the cake ingredients into a mixing bowl or food processor and mix well. Pour into a greased cake or loaf tin lined with grease-proof paper or baking parchment. Bake for 40 to 50 minutes until firm but springy to the touch.
You can also use the recipe to make small cup cakes. I use paper cases to do this.
For chocolate cake, replace the vanilla with 100gm melted chocolate. Ice with chocolate buttercream.
For coffee cake, replace the vanilla with 2 teaspoons of instant coffee in the milk or with strong coffee instead of the milk. Ice with coffee buttercream.
