Sponge Cake All-in-one Various

Cakes, Biscuits and Bread  

Ingredients

110 gm Plain flour
2 tsp Baking powder
110 gm Butter or margarine
110 gm Caster sugar
2 Egg(s)
Vanilla essence

Method

Pre-heat the oven to 170�C.

Grease and line 2 7-inch cake tins.

Sift the flour and baking powder into a large bowl. Add the rest of the ingredients and whisk them well. if the mixture is too thick to drop off the spoon easily when tapped, add 1 or 2 teaspoons of water. Divide the mixture between the 2 tins and bake for 30 minutes. Turn the cakes out onto a cooling rack to cool. Sandwich the cakes together with jam or buttercream icing.

Variation

For chocolate sponge, add 1 tablespoon of cocoa powder in place of the vanilla.

For coffee, add 1 tablespoon of instant coffee mixed with half a tablespoon of hot water in place of the vanilla.

For orange or lemon, add the zest of an orange or lemon and half a tablespoon of the juice in place of the vanilla.
