2 kg Strawberries
1.35 kg Granulated white sugar
2 Lemon juice
Hull the strawberries and layer them in a preserving pan with the sugar. Pour the lemon juice over the strawberries and leave to stand overnight.
To make the jam, place the pan over a low heat to dissolve the sugar. It must be completely dissolved before continuing. Put 6 1lb clean jam jars into a moderate oven to heat and sterilise. Place a small plate in the fridge to use for testing the setting of the jam. Once the sugar is dissolved, turn up the heat and once the jam is really boiling, time it for 8 minutes. Spoon a little onto the cold plate from the fridge and if it forms a crinkly skin it is set. If not continue boiling and retest after 3 minutes.
Once it is set, leave it to stand for about 15 minutes. Then pour into the warm sterilised jars and seal.
