Sauces, Stuffings and Marinades
1 Tbsp Cornflour
1 Tbsp Soy sauce
2 Garlic cloves
2 Tbsp Granulated white sugar
2 tsp Tomato puree
4 Tbsp Vinegar (any)
Salt
Black pepper
If you are using meat, cut it into cubes and marinade in the cornflour and soy sauce for a few minutes. For a vegetarian version, either marinade some of the vegetables in the same way (eg courgettes, aubergine, carrots, etc) or add the cornflour and soy sauce to the vegetables when frying. Then fry the meat or vegetables you are using in a little oil with the crushed or chopped garlic until lightly browned.
Add the sugar and tomato puree and continue cooking until the sugar is dissolved and syrupy. Add any other vegetables and pineapple if used and stir until cooked. Add the vinegar and continue cooking for about 1 minute. If the sauce is too thick add a little white wine or water. Season to taste.
Sherry can be used instead of white wine.
