5 Garlic cloves
� Tbsp Root ginger
1� tsp Coriander seeds
1 tsp Cumin seeds
� tsp Chilli powder
1 tsp Turmeric
1 tsp Garam marsala
� tsp Salt
1 Lime juice
2 Tbsp Yogurt
� Tbsp Olive oil
� Tbsp Vinegar (any)
Dry roast the coriander and cumin seeds, taking care not to burn them. Crush them in a pestle and mortar or grinder. Finely chop the garlic and ginger. Mix all the marinade ingredients together in a bowl. Add the fish or chicken cut into large pieces and mix well. Leave to marinade for a few hours.
Remove the pieces of fish and chicken and grill until browned and cooked.
Other meaty fish could be used instead of salmon. Beef or lamb could also be used.
If you do not have coriander and/or cumin seeds, ground coriander/cumin could be used instead.
A teaspoon of curry powder can be added if required.
