Sauces, Stuffings and Marinades
1 Onions
1 Garlic cloves
8 Tomatoes (red)
Salt
Black pepper
Oregano
1 Tbsp Olive oil
Peel and finely chop the onions and garlic. If using fresh tomatoes, remove the skins by piercing the skin of each tomato in one or two places and placing them in boiling hot water. Leave for a few minutes, then remove. The skins will slip off easily. Chop the tomatoes. Saute the onions and garlic in the oil until soft, then add the oregano and chopped tomatoes and seasoning. Simmer until the tomatoes are cooked and the liquid reduced to make a thick sauce.
You can use a tin of tomatoes in place of fresh ones.
This sauce can also be used to make tomato soup by adding liquid (water or milk).
