Welsh Cakes

Cakes, Biscuits and Bread  

Ingredients

225 gm Plain flour
110 gm Butter
75 gm Mixed dried fruit
1� tsp Baking powder
50 gm Caster sugar
1 Egg(s)
� tsp Mixed spice

Method

Rub the butter into the flour and baking powder. Add the fruit, sugar and spice and mix thoroughly. Add the beaten egg and mix to a dough. If it seems too dry, add a little milk.

Transfer the doiugh to a floured board and roll to about 5mm thick. Cut into rounds with a plain cutter.

To cook, use a griddle pan if possible, otherwiae a heavy frying pan. Lightly grease it with lard or other fat. Cook cakes over a medium heat for about 3 minutes on each side. Serve them warm.

Variation

Use cinnamon instead of mixed spice.
