75 gm Cheddar cheese
12 gm Blue cheese
1 Tbsp Plain flour
25 gm Butter
Milk
Cayenne pepper
1� tsp Grain mustard
2 tsp Worcestershire sauce
Melt the butter in a pan, add the flour and then enough milk to make a thick white sauce Bring to the boil. Add the cheese (the blue cheese is optional) and seasonings.
Serve on toast.
This can be made in advance and kept in the fridge or the freezer. To serve, spread thickly over toast and place under a hot grill to heat and brown.
