100 gm Plain flour
1 tsp Salt
2 Egg(s)
280 ml Milk
Sift the flour and salt into a mixing bowl. Make a well in the flour and whisk in the eggs one at a time, then add the milk still whisking. You want to get as much air into the mixture as you can. Leave to stand for about half and hour or more.
When ready to use, heat the roasting pan (or set of small pans) in a hot oven 200�C with a little oil or some fat from the roast beef. Whisk the batter again and pour into the hot pan. Bake for about 20 minutes. Serve immediately.
It is important to have the pan(s) very hot before pouring in the mixture and not to open the oven unnecessarily until the pudding(s) are done or they will flop.
This mixture can be used to make toad-in-the-hole. In this case put the sausages in a roasting tin with a little oil and start cooking them in a hot oven. When the sausages have started to brown, proceed as for Yorkshire pudding.
