Bara Brith

Ingredients

1 kg Mixed dried fruit
250 gm Brown sugar
400 ml Cold tea
450 gm Plain flour
5 tsp Baking powder
2 tsp Cinnamon
1 tsp Ground ginger
2 tsp Mixed spice
½ tsp Ground nutmeg
1 Egg(s)

Method

Soak the fruit and sugar in the tea and leave overnight.

Preheat the oven to 170ºC.

Mix the remaining ingredients into the soaked fruit and beat well. Pour the mixture into greased and lined loaf tins. Bake for 1.5 hours until cooked.

Notes

If the mixture seems too dry, add a little more water.
